Simples offers a French-inspired menu featuring the freshest seafood from Suruga Bay and locally sourced ingredients from Shizuoka. Each omakase dish is crafted to highlight the natural flavors and textures of the day’s finest produce, perfectly paired with wine and local sake.

Chef Yasuhiko Inoue embarked on his journey to bring out the best in carefully cultivated ingredients at age 20. At 24, he traveled to Belgium, France, and Italy, refining his craft through years of training. After returning to Japan, he opened Simples in Shizuoka City and now welcomes guests to Izumigaya, where his cuisine continues to evolve with the seasons.

The seafood at Simples comes from Sasue Maeda Fish Store, renowned for its exceptional skill in enhancing the natural quality of fresh fish. Maeda’s expertise is so highly regarded that some chefs have relocated their restaurants just to source his seafood. Paired with Chef Inoue’s masterful preparation, these dishes attract discerning food lovers from all over Japan.
